Ingredients (serves 2)
- 1 medium sized whole wheat bolillo roll
- 1/2 cup vegetarian low salt refried beans
- 1/4 cup shredded part skim mozzarella cheese
- 1/4 cup cooked soy chorizo
- 1 small Roma tomato (diced)
- 2 Tbsp cup white onion
- 1 small jalapeno (Seeded and diced)
- 2 Tbsp chopped cilantro
Instructions
Mollete Base:
- Start by warming up 1/2 cup of refried bean
- Slice your bolillo lengthwise and toast to your liking
- Spread 1/4 cup onto each toasted side of the bolillo bread
- Divide the shredded cheese and chorizo between the 2 toasted bolillos and sprinkle on top of the beans.
Mollete Topping:
- In a small bowl, toss together the diced tomato, diced jalapeno, chopped onion and chopped cilantro.
- Divide the mixture onto each Mollete base.
- Serve and enjoy!
