Budget Burritos in Bulk!

Ingredients (Serves 6)

  • 1 can of low sodium black beans
  • 1 bag of frozen fajita mix
  • 1/2 cup Frozen corn
  • 1.5 cups Shredded part-skim mozzarella cheese
  • 1 jalapeño, thinly sliced, ( optional)
  • 1 pack (6) wheat tortillas

Instructions

  1. Start by sautéing your fajita mix with 1 tablespoon of olive oil on medium heat. You will see the onions become a little wilted, and the peppers a little less crunchy. Remove them from the heat when they are cooked to your liking.
  2. While the fajita mix is cooking, prepare your other ingredients: lay out your burrito wraps, top with cheese and black beans, and add your fajita mix, and jalapeños if desired.
  3. Next, wrap your burritos by tucking in from the sides and then rolling.
  4. You may eat the burritos this way, or if you prefer, put them back in the pan and brown them over medium heat. Turn them every two minutes to brown each side.

Cooking Tips

  • The Tortillas: Sprouted wheat tortillas from Trader Joe’s are the healthiest I’ve found, but they can sometimes be a bit brittle and break when you wrap them. Another option is to try low-carb tortillas by the Mission brand, but they are a bit too processed, so I don’t typically recommend them. For the sake of this recipe, I simply used up tortillas that my kids don’t eat. 🤷🏼‍♀️
  • Fillings: For added flavor, I love using roasted frozen corn (and it doesn’t have salt)! To create different flavors for this burrito, simply use different fillings. Sometimes I’ll make these burritos with red kidney beans, tomato sauce, my favorite veggie pizza toppings, and a bit of pizza spice mix. Healthy hot pockets, anyone?
  • Cost: Depending on the ingredients you use, this recipe can cost between $12-$18 for six burritos, with some ingredients left over. My cost estimate is based on all organic ingredients and California prices. It may be less expensive in other states.
  • Storage: Let these cool completely, and then freeze them. When you want a hot meal that you can trust to be healthy, just grab one of these and microwave it for 2 minutes. It’ll hit the spot!
