Healthy Sautéed Mushrooms

These little powerhouses offer potent anti-aging properties, boost immune function, and can even help manage glucose, blood pressure, and weight! Allow me to proudly introduce you to the delicious Healthy Sautéed Garlic Lemon Mushrooms.

Ingredients:

  • 1 pound mushrooms, cleaned and sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • 1 tsp fresh or dried thyme leaves (optional, but if you add it, fresh is best)
  • Fresh parsley, chopped (optional, for garnish)
  • Lemon zest (optional, for garnish)

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic to the skillet and sauté for about 30 seconds, or until fragrant.
  3. Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they are tender and golden brown, about 5-7 minutes.
  4. Squeeze the lemon juice over the mushrooms and season with salt, thyme, and pepper to taste. Stir well to combine.
  5. Continue cooking for another minute, then remove the skillet from heat.
  6. Garnish the mushrooms with chopped fresh parsley, and/or lemon zest if desired, and serve hot.
