What’s your favorite type of cuisine? For me, it’s Mediterranean - It’s both healthy and delicious! This culinary tradition has been praised for its emphasis on whole foods such as fresh vegetables, fruits, whole grains, leaner meats like poultry and fish, and healthy fats like olive oil. Not to mention, Mediterranean dishes are often packed with flavorful herbs and spices like oregano, basil, and thyme, which can help to reduce the need for added salt or sugar in recipes.
One of my go-to recipes is Mediterranean turkey meatballs. Why turkey? Compared to beef or pork, turkey is generally leaner, providing a great source of protein with less saturated fat. While many recipes call for breadcrumbs, this version is low-carb and still holds together well.
Mediterranean Turkey Meatballs
Prep Time: 15 min | Cook Time: 20 min | Total Time: 35 min | Serves: 2
Ingredients:
- 8 oz turkey meat
- 1 egg
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped red onion
- 1 tbsp minced garlic
- 1/2 tbsp olive oil
- Salt to taste
- Pepper to taste
- Italian seasoning to taste
Instructions :
- Preheat oven to 400ºF.
- Line a baking sheet with parchment paper.
- In a large bowl, mix the ingredients together.
- Form mixture into 1-inch turkey meatballs and put on baking sheet.
- Bake in the oven for 20 minutes or until the meatballs reach an internal temperature of 165ºF.
Tips & Reminders:
- Did you know that you can use an ice cube tray to store minced garlic for up to 3 months? Each standard ice cube tray compartment holds around 1 to 2 tablespoons of minced garlic, super time saving!
- For an added kick of freshness, dip this turkey meatball in some homemade tzatziki (yogurt cucumber) sauce!
- Store fully cooked turkey meatballs in an airtight container in the fridge for up to 3 days, or in the freezer for up to 3 months.
