I love oats not only for their health benefits but also for their ability to keep me feeling full in the morning, providing the energy I need to tackle the day ahead. However, as the weather gets hotter, my cravings shift towards waffles instead of a hot bowl of oatmeal. Fortunately, we've discovered a fantastic solution: oat waffles! This recipe has quickly become one of my all-time favorites. By incorporating bananas as a natural sweetener, the pancakes acquire a gentle, subtle sweetness that isn't overpowering. Moreover, the addition of cinnamon provides a delightful twist that I've come to appreciate.
Prep time: 5 minutes
Cooking time: 10 minutes
Ingredients (yields 4 servings)
- 2 ripe bananas
- 2 eggs
- 1/2 cup 1% milk or nut-based milk
- 1 ½ cups old fashioned rolled oats
- 2 teaspoons honey
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- Pinch of salt
Instructions
- Blend the ingredients in a blender until they form a smooth mixture.
- Spray some olive oil on the waffle maker and preheat it.
- Pour the prepared mixture into the waffle maker.
- Once the waffle maker signals that the waffles are ready (typically around 4-6 minutes), carefully open the waffle maker and remove the waffles.
- It's incredibly simple, isn't it? Enjoy the waffles on their own or top them with some Greek yogurt and fresh fruits for added delight!
Tips
- This recipe yields 8 waffles, with a suggested serving size of 2. To store leftovers, simply separate each waffle with parchment paper, place them in a zip lock bag, seal it tightly, and store it in the frozen compartment for future enjoyment. They can last around 3 months!
- When you want to enjoy them again, simply pop the desired number of waffles into a toaster and heat them for about 2 minutes or until they are delightfully warm.
