Indulge in a healthier version of tarts that you'll love! If you're a fan of peanut butter, you're in for a treat! The aroma while baking is simply irresistible, and the delightful crunch is truly satisfying. Complete your tart with your favorite fruit - I opted for blueberries, but feel free to explore strawberries, goji berries, or even pomegranate for a tantalizing burst of flavor!

Prep time: 5 minutes

Cooking time: 12 to 20 minutes

Ingredients (serves 6)

  • 1.5 cup oats
  • 1 cup nonfat greek yogurt
  • 0.5 cup peanut butter, melted (substitution: almond butter)
  • 3 tbsp brown rice syrup (substitution: maple syrup or honey)
  • 40 g blueberries

Instructions

  1. In a bowl, thoroughly combine oats, peanut butter, and brown rice syrup.
  2. Carefully portion the mixture into your muffin pan, dividing it evenly into 6 portions. Press the edges firmly to ensure they stick together and form cohesive tart shapes.
  3. Preheat your oven to 350F and bake the tarts for 12 to 20 minutes, keeping a close eye to ensure they hold together without burning.
  4. Allow the tarts to cool down. Once cooled, spoon Greek yogurt into each tart.
  5. Get creative and adorn your tarts with vibrant blueberries or any fruit of your liking, adding a burst of freshness and natural sweetness.

Tips:
